WebI'm curious about buckwheat -- it's not a grain. It's fairly low-GI (not that it matters), it has more nutrients than a potato, fewer anti-nutrients than a potato (or raw nightshade), and I can probably prepare it as a fermented food to be low in anti-nutrients (lower than nuts / seeds.) I'm curious to hear arguments for or against this.
